This is my favorite eggplant recipe next to eggplant parmesan. So easy to make and so delicious! Great side dish to any roast.

Ingredients For cheesy baked eggplant

  • 1 lg
    eggplant, peeled and diced
  • 1 md
    onion, sliced
  • 1 tsp
    worcestershire sauce
  • 1 clove
    garlic, minced
  • 10
    saltine crackers, crushed
  • 1/2 c
    light cream
  • 1/2 c
    shredded cheddar cheese
  • 1 Tbsp
    butter
  • salt & pepper to taste
  • 1/4 c
    breadcrumbs

How To Make cheesy baked eggplant

  • 1
    Bring small amount of salted water to boil in saucepan and add eggplant and onions. Boil until tender, about 5 min. Drain and put in buttered casserole.

    Add cheese, worcestershire, garlic, crackers, cream. Add salt and pepper to taste.

    Dot casserole with butter and top with bread crumbs. Bake at 350 for 15-20 minutes.
