Ingredients For cheese-filled mushroom caps

    large mushrooms (fresh),caps reserved,stems minced.
  • 1/3 c
    butter, unsalted
  • 2 tsp
    minced onion
  • 3/4 c
    bread crumbs
  • 2 Tbsp
    fresh parsely minced
  • 2 Tbsp
    fresh lemon juice
  • 1 tsp
    salt
  • 3 oz
    (3/4 cup) goat cheese crumbled
  • 2 (1/2 cup oz
    blue cheese crumbled
  • 1/4 stick
    butter, unsalted

How To Make cheese-filled mushroom caps

    place mushroom caps,hollow side up,in9x13-inch baking dish. Preheat oven to 450f.

    melt buter in a medium skillet. Add miced stems and onion,and saute over med heat untill soft. Remove from heat and add bread crumbs,parsley,lemon juice,and salt. Mix well:cool to room temperature.

    Stir in cheeses until combind. Spoon cheese mixture into mushroom caps. Brush with melted butter. Bake 5-7 minutes until lightly browned.
