Ingredients For celery gratin

1 bunchcelery, sliced

1 tspsalt
-
water, enough to cover
-
2 Tbspbutter
-
2 Tbspflour
-
1/4 tspnutmeg
-
1/4 tspblack pepper
-
2 cmilk
-
1/2 cbread crumbs
-
3 Tbspparmesan cheese
-
3 Tbspscallions, chopped (both whites & greens)

2 Tbspparsley flakes
How To Make celery gratin

1Combine celery, salt & water to cover in a medium skillet. Bring to a boil; reduce the heat to medium low & cook until most of the liquid is absorbed. Push the celery to one side of the skillet.

2Add butter, flour, nutmeg & pepper to the other side; cook, stirring, 3 minutes. Add milk; cook, stirring all of the ingredients together, until creamy. Season with salt & pepper.

3In a bowl mix breadcrumbs, parmesan, scallions & parsley; sprinkle over the celery mixture & broil until golden.
