Ingredients For celery gratin

  • 1 bunch
    celery, sliced
  • 1 tsp
    salt
  • water, enough to cover
  • 2 Tbsp
    butter
  • 2 Tbsp
    flour
  • 1/4 tsp
    nutmeg
  • 1/4 tsp
    black pepper
  • 2 c
    milk
  • 1/2 c
    bread crumbs
  • 3 Tbsp
    parmesan cheese
  • 3 Tbsp
    scallions, chopped (both whites & greens)
  • 2 Tbsp
    parsley flakes

How To Make celery gratin

  • 1
    Combine celery, salt & water to cover in a medium skillet. Bring to a boil; reduce the heat to medium low & cook until most of the liquid is absorbed. Push the celery to one side of the skillet.

    Add butter, flour, nutmeg & pepper to the other side; cook, stirring, 3 minutes. Add milk; cook, stirring all of the ingredients together, until creamy. Season with salt & pepper.

    In a bowl mix breadcrumbs, parmesan, scallions & parsley; sprinkle over the celery mixture & broil until golden.
