I love this. The pesto is a mix of salty, sweet, earthy flavors. Really takes cauliflower to the next level. It's just as good on Asparagus

Ingredients For cauliflower steaks with sweet pickle pesto

  • FOR THE PESTO
  • 1/4 c
    each fresh parsley and cilantro chopped
  • 1 Tbsp
    drained capers
  • 1/2 c
    chopped sweet pickles
  • 2 clove
    garlic minced
  • 1 Tbsp
    each dijon mustard, whole grain mustard, olive oil, lemon juice and grated parmesan cheese
  • 1 tsp
    white wine vinegar
  • FOR THE CAULIFLOWER STEAKS
  • 2
    heads cauliflower
  • salt and pepper
  • 2 Tbsp
    coconut oil
  • 1/2 c
    dry white wine
  • 1 tsp
    lemon zest

How To Make cauliflower steaks with sweet pickle pesto

    Place all ingredients for pesto in a food processor and process until well mixed. Place in fridge and let the flavors develop
  • 2
    Cut the cauliflower into 1 inch slices all the way down from top of head through the stalk. Season both sides with salt and pepper.

    Place the coconut oil in a large skillet. Add the cauliflower and sear over med heat for 5 minutes each side. Pour in the wine and let all of the wine evaporate.

    Serve the cauliflower steaks with the pesto and lemon zest.
