Ingredients For cauliflower steaks with sweet pickle pesto
- FOR THE PESTO

1/4 ceach fresh parsley and cilantro chopped

1 Tbspdrained capers

1/2 cchopped sweet pickles

2 clovegarlic minced
-
1 Tbspeach dijon mustard, whole grain mustard, olive oil, lemon juice and grated parmesan cheese

1 tspwhite wine vinegar
- FOR THE CAULIFLOWER STEAKS

2heads cauliflower
-
salt and pepper
-
2 Tbspcoconut oil
-
1/2 cdry white wine
-
1 tsplemon zest
How To Make cauliflower steaks with sweet pickle pesto

1Place all ingredients for pesto in a food processor and process until well mixed. Place in fridge and let the flavors develop

2Cut the cauliflower into 1 inch slices all the way down from top of head through the stalk. Season both sides with salt and pepper.

3Place the coconut oil in a large skillet. Add the cauliflower and sear over med heat for 5 minutes each side. Pour in the wine and let all of the wine evaporate.

4Serve the cauliflower steaks with the pesto and lemon zest.
