Ingredients For cauliflower hard cider porridge

2 Tbspbutter

1 mdonion, diced

4 clovegarlic, minced

1 mdcarrot, sliced

1head cauliflower, broken into florets

2 1/2 chard apple cider
-
2 Tbspchicken bouillon
-
1/2 cmilk
-
1/2 cheavy cream
-
salt and pepper, to taste

chives, to garnish
How To Make cauliflower hard cider porridge

1Add the butter to a large Dutch oven over medium-high heat. Add the onion and garlic and cook until translucent.

2Add the carrot and cauliflower. Mix the hard cider with the chicken bouillon in a large measuring cup. Pour over the vegetables in the Dutch oven. Bring to a boil. Reduce the heat, cover and cook for about 50 minutes, until the the vegetables are very soft.

3Strain, reserving the liquid. Working in batches, add the vegetables to a food processor and puree with a little of the reserved liquid until smooth.

4Transfer the mixture back to the Dutch oven and add the milk and heavy cream. Stir and cook over low heat for about 5 minutes. Taste and season with salt pepper.

5Serve garnished with chives.
