Ingredients For cauliflower casserole

  • 1 md
    cauliflower head, broken up
  • 4 lg
    red new potatoes, unpeeled and cut in 1/4
  • 1 Tbsp
    butter
  • 1 tsp
    salt
  • 1/4 tsp
    pepper
  • 3
    eggs
  • 3/4 c
    Gruyere cheese
  • 1/4 tsp
    cayenne pepper

How To Make cauliflower casserole

  • Cooking the cauliflower.

    Cook the cauliflower in boiling salted water for 15 minutes or until tender.
  • Boiling the potatoes.

    Meanwhile, cook the potatoes in boiling water for 15 minutes or longer until tender.
  • Potatoes and cauliflower in a bowl with butter and seasonings.

    Drain the potatoes and cauliflower and place them in a mixing bowl. Add the butter, salt, pepper, and cayenne.
  • Mashing ingredients together.

    Mash together to make a puree; it is better to use a potato masher as a food processor can make it too mushy.
  • Mixing in an egg.

    Beat the eggs into the puree, one at a time,
  • Stirring in cheese.

    Then stir in the cheese.
  • Baking mixture in a baking dish covered in foil.

    Spoon into a greased dish and bake for one hour with foil on it in a 350 oven.
