Ingredients For cauliflower casserole

1 mdcauliflower head, broken up

4 lgred new potatoes, unpeeled and cut in 1/4

1 Tbspbutter

1 tspsalt

1/4 tsppepper

3eggs

3/4 cGruyere cheese

1/4 tspcayenne pepper
How To Make cauliflower casserole

1Cook the cauliflower in boiling salted water for 15 minutes or until tender.

2Meanwhile, cook the potatoes in boiling water for 15 minutes or longer until tender.

3Drain the potatoes and cauliflower and place them in a mixing bowl. Add the butter, salt, pepper, and cayenne.

4Mash together to make a puree; it is better to use a potato masher as a food processor can make it too mushy.

5Beat the eggs into the puree, one at a time,

6Then stir in the cheese.

7Spoon into a greased dish and bake for one hour with foil on it in a 350 oven.
