No clue as to where I got this recipe but I love carrots. These are really good and I especially like making them when I have an abundence of carrots that need to be used up.

Ingredients For carrot sticks

  • 1 lb
    carrots, cut into sticks
  • 2 Tbsp
    brown sugar, firmly packed
  • 1 tsp
    cornstarch
  • 1/4 c
    orange juice
  • 2 Tbsp
    butter or margarine, softened

How To Make carrot sticks

  • 1
    Boil carrot sticks in water until tender. Set aside.

    In a saucepan, combine sugar, cornstarch then stir in orange juice and butter & mix until smooth. Slowly bring this to a boil and boil two minutes or until thick & bubbly.

    Drain carrots and top with orange juice mixture.

    NOTE: according to another great cook on this site, Colleen Sowa, you can cut the carrots into coins rather than into sticks.
