Extra carrots on hand? Here's a quick and easy way to get rid of them. I have also added onion in this casserole.

Ingredients For carrot casserole

  • 2 lb
    peeled, sliced & cooked carrots
  • 1/2 stick
    butter or margarine, melted
  • 1 Tbsp
    granulated sugar
  • 1 Tbsp
    self-rising flour
  • 1 c
    milk
  • 1 c
    grated sharp cheddar cheese
  • salt & pepper (to taste)

How To Make carrot casserole

  • 1
    Cook carrots until fork tender then drain. Preheat oven to 350.
  • 2
    Add all ingredients together and combine well. Pour into a greased casserole dish and bake on 350 for approximately 30 minutes.
