This side dish is truly delicious and goes well with most meats or fish. The hardest part for me was peeling it, and I learned that it's easiest to microwave it so it softens and is easier to cut and remove skin. To do that, cut several slits in the skin of the squash so it's vented and steam can escape while it's cooking. Every microwave is different, so the cooking time varies, but a medium squash will take approximately 10 minutes.

This is an easy and delicious way to prepare butternut squash. It's the perfect holiday side dish but easy enough to have as a side with most fall and winter meals. There is just enough sugar and butter to coat the butternut squash and caramelize wonderfully in the oven.

6 Tbspbutter, melted

1/4 cbrown sugar, firmly packed

How To Make caramelized butternut squash

1Preheat oven to 400 degrees. Cut off and disregard the ends of the squash. Cut in half lengthwise and then remove the seeds.

2Peel the squash and cut into cubes.

3Place squash on a baking sheet. Pour the melted butter over the cubed squash. Add the brown sugar and pepper. Mix everything together so all of the squash is coated (using your hands makes it easier). Then spread in a single layer on the baking sheet.

4Roast in the oven for 45-55 minutes, until the squash is tender and the glaze begins to caramelize. During cooking time be sure to turn the squash a few times so it browns evenly. Also, keep an eye on it so that it does not burn.
