Given to me by a friend. Her version was yummier, but she used a homemade pie crust! It's a nice light lunch or side dish. I recommend using a block of cheese & NOT low-fat. The pre-grated & lowfat versions don't melt as well.

Ingredients For caprese tart

  • 12 oz
    fresh grated mozzerella
  • 2-3
    sliced roma tomatoes
  • 2 Tbsp
    olive oil
  • fresh basil
  • pepper
  • 1
    unbaked pie shell

How To Make caprese tart

  • 1
    Place pie shell in pie plate.
  • 2
    Cover shell with a layer of cheese,basil, and pepper.

    Layer with tomato slices & more pepper.
  • 4
    Repeat. End with layer of tomatoes & pepper.

    Pour olive oil over the top.
  • 6
    Bake 45 minutes or until cheese is melted & tomatoes begin to shrivel.
