One of our favorite summertime salads is Caprese salad. I mean, we can't get enough of it, especially when garden-ripe tomatoes are in season. We found some beautiful bigger than large cherry tomatoes but smaller than Roma tomatoes, and came up with these little beauties. They are a one-bite wonder. Not only are they beautiful, they are fun, and they just scream summertime and freshness. Fix them for your next BBQ, potluck, or dinner party. Your dinner guests and friends will be so impressed! That is IF you can make it out of the house with them. Betcha can't eat just 5!

If you love a Caprese salad, you'll enjoy this easy bite-size appetizer. Cherry tomatoes are sweet next to the pieces of fresh mozzarella. Basil adds its pepper flavor and makes this dish taste like summer. The combination of balsamic vinegar and olive oil is a classic dressing and brings all of the flavors together. A delicious appetizer for every summer gathering when tomatoes and basil are in season and at their peak flavor.

Ingredients For caprese salad bites

  • 1 pkg
    Flavorino tomatoes or any extra large cherry tomato
  • coarse sea salt
  • black pepper
  • 1 pkg
    fresh basil leaves
  • 1 pkg
    mozzarella pearls
  • extra-virgin olive oil
  • good balsamic vinegar

How To Make caprese salad bites

Test Kitchen Tips
Use a melon baller to scoop the meat out of the tomatoes. Can't find mozzarella pearls? Cut a ball of fresh mozzarella into bite-size pieces. If you want to make this ahead of time, assemble the tomato, mozzarella, and basil. Wait to drizzle the oil and vinegar on until right before serving.
  • Cut the tomatoes in half and remove the pulp from the tomato.

  • Season with salt and pepper.

    Season well with coarse sea salt and ground black pepper.
  • Tear pieces of basil and place in the tomato.

    Tear basil leaves and press a piece down inside each tomato half.
  • Place tomatoes on a dish, add mozzarella pearl to the center, and top with a little more basil.

    Lay them at the bottom of a dish with a lip on it. Take a mozzarella pearl and press down on the basil leaf to get it to sit inside the tomato half. Add another small piece of basil on top.
  • Drizzle with olive oil.
