I had this salad in the beautiful mountains of southwest Virginia this weekend. Wintergreen mountain resort - a great place! Compliments of my cousin Mary Jean.

Ingredients For cannelini and chickpea salad

1 cancannelini beans, rinsed and drained

1 canchick peas, rinsed and drained

1/2 cpurple onion, chopped

1/2 ccelery, chopped

1/2 cred bell pepper, chopped

1 cwhite shoepeg corn, drained

1/2 colive oil, light
-
1/4 cfresh squeezed lemon juice
-
1 tspgreek seasoning
How To Make cannelini and chickpea salad

1Be sure all beans and corn are well drained. Stir together in a large bowl with the chopped vegetables.

2Whisk together the oil, lemon juice, and Greek seasoning. Pour over the beans and vegetables, mixing well. Refrigerate 1 hour before serving.
