Ingredients For butternut squash quinoa

3 cbutternut squash cubed

olive oil

salt and pepper

2 cchicken broth

1/2 conion

1 Tbspolive oil

2 cmushrooms sliced

1 Tbspgarlic minced

1 cquinoa (we used red and white)

1 Tbspthyme, leaves

1 Tbspsage leaves, fresh

1/2 cpeas frozen

1/4 cparmesan cheese

2 Tbspwalnuts chopped
How To Make butternut squash quinoa

1Preheat oven to 425F toss squash. Place in oven for 25 minutes stiring every ten minuts untill tender. Set aside.

2Toast quinoa in a sauce pan, add onions, garlic and broth cook for 15 minutes.

3Add mushrooms peas, thyme and sage cook for an additional 5 minutes

4Garnish with walnuts and cheese
