I like this one because it is not sweet. I love sweet don't get me wrong, but I don't want sweet for my sides all the time.

Ingredients For butternut squash casserole

  • 1
    peeled and diced butter nut squash
  • 2 Tbsp
    mayo
  • 2 Tbsp
    butter
  • 1/2 c
    onion, diced
  • 3
    chopped sage leaves or 1/2 tsp dried sage
  • 1 tsp
    brown sugar
  • crushed saltines
  • parmesan cheese grated
  • melted butter
  • salt and pepper

How To Make butternut squash casserole

  • 1
    bake or boil squash. I think baking adds more flavor use butter or olive oil to saute onions till very soft. Use a potato masher to mash up the squash and onions.

    Add mayo, butter, sage, brown sugar and salt/pepper pour into a sprayed or buttered casserole dish.

    Top with the saltine crackers which have been tossed in melted butter and the grated parm. Bake at 350 for about 45 min till browned on top and puffy.
