Ingredients For butternut squash bake

  • 1/4 c
    melted butter or margarine
  • 1/2 c
    sugar
  • 2
    eggs or egg subsitute
  • 1 can
    (5 oz.) evaporated milk
  • 1 tsp
    pure vanilla extract
  • 2 c
    mashed, cooked butternut squash or 2 10 oz. packages of cooked frozen winter squash (thawed and drained.)
  • 3/4 c
    crisp rice cereal
  • 1/4 c
    packed brown sugar
  • 1 Tbsp
    butter or margarine, melted

How To Make butternut squash bake

  • 1
    Mix together butter and sugar, beat in eggs, milk and vanilla. Stir in squash (mixture will be thin).

    Pour into a greased 11 x 7 in. baking pan. Bake, uncovered at 350 degrees for 45 minutes or until almost set.

    Combine rice cereal, brown sugar and melted butter, sprinkle over casserole. Return to oven for 10 minutes or until bubbly.
