I've tried this recipe, ( from my dad,) using different kinds of squash. This squash tastes the best w/ this recipe, at least I think so. Just don't tell my dad!!! Really I just love butternut squash almost any way it's cooked.

Ingredients For butternut squash bake

3 lbbutternut squash, peeled, cubed
-
2 lgeggs, beaten
-
1 creduced-fat, shredded cheddar cheese
-
1 lgonion, chopped
-
3/4 cfat-free milk
-
1/2 tspsalt
-
1/4 tsppepper
-
1/2 creduced-fat ritz crackers, crushed
-
2-1/2 Tbspbutter
How To Make butternut squash bake
-
1Boil squash in lg pot of water until tender, about 20 min. Drain, place in lg bowl. W/ mixer on med-low, mash squash. In another bowl, combine beaten eggs, cheese, onion, milk, salt & pepper. Add mix to the squash and w/ mixer, mix until smooth. Spray a 2-quart baking dish w/ cooking spray. Transfer squash mix to baking dish. Sprinkle w/ crushed crumbs and evenly dot w/ butter. Bake @ 350, uncovered for 45 min.
