I've had this recipe for quite awhile- don't remember where I got it- I think it was at a family potluck or something like that- All I know is- there wasn't any left by the time I went back for seconds! lol

Ingredients For broccoli spoon bread

2 cmilk
-
1/2 ccream of rice hot cereal, uncooked

10 ozpkg. thawed chopped broccoli

1 ccheddar cheese, shredded

4 mdeggs, lightly beaten

2 Tbspbutter or margarine
-
1 clovegarlic, minced
-
2 tspdried basil leaves
-
2 tspbaking powder
How To Make broccoli spoon bread

1Preheat oven to 375^. Bring milk just to boil in medium saucepan on medium-high heat. Reduce heat to medium. Gradually add cereal, stirring constantly, to avoid lumps-( this is very similar to cream of wheat- which you could use if you wish). Cook and stir 30 seconds. Remove from heat. Cover with lid or wax paper and let stand 5 minutes. Add remaining ingredients; mix well. Pour into a greased or sprayed 1 1/2 quart baking dish. Bake 30-40 minutes, or until golden brown.

2Note: other thawed vegetables may be used instead- like cut green beans, mixed vegetables or cauliflower.
