I've had this recipe for quite awhile- don't remember where I got it- I think it was at a family potluck or something like that- All I know is- there wasn't any left by the time I went back for seconds! lol

Ingredients For broccoli spoon bread

  • 2 c
    milk
  • 1/2 c
    cream of rice hot cereal, uncooked
  • 10 oz
    pkg. thawed chopped broccoli
  • 1 c
    cheddar cheese, shredded
  • 4 md
    eggs, lightly beaten
  • 2 Tbsp
    butter or margarine
  • 1 clove
    garlic, minced
  • 2 tsp
    dried basil leaves
  • 2 tsp
    baking powder

How To Make broccoli spoon bread

    Preheat oven to 375^. Bring milk just to boil in medium saucepan on medium-high heat. Reduce heat to medium. Gradually add cereal, stirring constantly, to avoid lumps-( this is very similar to cream of wheat- which you could use if you wish). Cook and stir 30 seconds. Remove from heat. Cover with lid or wax paper and let stand 5 minutes. Add remaining ingredients; mix well. Pour into a greased or sprayed 1 1/2 quart baking dish. Bake 30-40 minutes, or until golden brown.
