This is a very tasty side dish and would go well with most any main dish. Prepare a few hours ahead to make sure it is well chilled when served.

Ingredients For broccoli salad

  • 1 bunch
    fresh broccoli florets (2 if they are smaller sized)
  • 1 sm
    red onion, chopped
  • 1 c
    sharp cheddar cheese (or use shredded cheese of your choice) ***see note below
  • 1/2 c
    real bacon bits (fry bacon and crumble yourself or use bac-o's
  • 1 c
    mayonnaise (salad dressing isn't as good--use mayo only!)
  • 1/4 c
    sugar (or use 2 level tbsps splenda)
  • 2 Tbsp
    red wine vinegar
  • 1/4 c
    sliced black olives

How To Make broccoli salad

  • 1
    Mix together the first four ingredients, cover and refrigerate. Mix together the next three ingredients in a bowl, cover and refrigerate until ready to serve. Combine all ingredients together in a serving bowl when about to serve, add sliced black olives, blending everything well.

    *** (Note:)I have made this when I had no cheese to add to it and it was still very good! So you could dispense with the shredded cheese if desired.
