Ingredients For broccoli and onion casserole

  • 1 pound
    fresh broccoli
  • 2 cups
    fresh onions or leeks, chopped
  • 1 cup
    sharp or medium cheddar cheese
  • 4 tbsp
    butter
  • 2 tbsp
    flour
  • 1/4 tsp
    salt, dash of pepper
  • 1 cup
    milk
  • 4 oz
    cream cheese
  • 2 tbsp
    butter
  • 1 cup
    fresh breadcrumbs
  • 2tbsp
    parmesan cheese

How To Make broccoli and onion casserole

    Cut broccoli into bite size pieces and cook in boiling water for about 3 minutes, drain Blanch onions,drain.

    Sauce... melt butter over medium heat, add flour, salt,pepper and milk and whisk until smooth. Blend in cream cheese until melted and smooth.

    Place broccoli into a 2 quart casserole dish. Place blanched onions on top of broccoli layer. Pour sauce over vegetables, spreading evenly. Sprinkle cheddar cheese over sauce. Melt about 2 tbsp of butter in small bowl and add about a cup of fresh breadcrumbs and 2 tbs parmesan cheese. Mix well and sprinkle over sauce. Bake at 350 F for about 35 minutes or until topping is brown and crispy.
