This is a series of 'Eggplant' recipes I will be posting. They come from a vintage cookbook so you will notice the extended use of butter and/or fat. I exchange the fats for veggie oil, usually Canola oil. Please use any light oil of your choice.

Ingredients For breaded eggplant

  • 2 lb
    eggplant
  • 1 tsp
    salt
  • 1/8 tsp
    pepper
  • 1
    egg, beaten
  • 1 c
    cracker crumbs
  • 3 Tbsp
    butter

How To Make breaded eggplant

  • 1
    Pare eggplant and cut into 1/4 inch slices. Sprinkle with salt and pepper. Dip into beaten egg and then into cracker crumbs.

    Place in greased baking pan; dot with butter and bake in hot oven (400 degrees F.) 40 minutes or until browned.
