Ingredients For bob's stewed eggplant.

1egg plant, peeled and cubed

4 to 6 slicebacon
-
1 mdonion, diced
-
1/2 cdiced green bell pepper

1-8oz cantomato sauce, italian seasoned

1/4 tspsalt and pepper
-
1/2 tsporegano, dried,thyme,cumin,and curry powder

2bay leaves
-
3/4 tspgarlic powder
-
1/3 csliced pitted olives
-
2celery ribs, diced
-
8ozmushrooms, your choice
How To Make bob's stewed eggplant.

1In a cast iron dutch oven over med heat. Cook bacon till chrisp. Remove with slotted spoon, drain and crumble. Set a side.. In the bacon drippings cook onion,pepper,celery , and mushrooms lightly..Now add eggplant and every thing else,(Except bacon and olives). Cover and cook 30 to 40 minutes or untill eggplant is tender..Uncover,add olives and bacon just befor serving...
