With so much zucchini coming out of the garden. I was looking for ways to use all that was coming out. Found this in an old cook book. Added some things of my own. I hope that you enjoy this if you try it. I think it is very good..

Ingredients For bob wakeman's baked zucchini.

2 lbzucchini

1 1/3 cmild chedder cheese, shredded

1/2 ccottage cheese

1/2 cchopped nuts, your choice

1 cbutton mushrooms , cooked.

1/2 lbbacon. cooked and chopped.

4 lgeggs, betten.

3/4 cbread crumbs, seasoned

3 Tbspchopped parsley,

2 Tbspchopped thyme

salt and pepper, to taste.

5 Tbspreal butter, devided.
How To Make bob wakeman's baked zucchini.

1in a non-stick skillet. add 1 1/2 tablespoon butter. Cook mushroom and bacon till bacon is crisp. Remove and crumble. Wash zucchini and cut crosswise into 1/4 inch slices. Pre-heat oven to 375.

2Combine cheese, nuts, parsley, thyme, salt and pepper, bacon, and bread crumbs. mix well, In a baking dish layer zucchini then some of the sauce. Layer till all the zucchini is used up.

3Pour butter and bacon drippings over the backing dish. Then dot with remaining butter. Back at 375 for about 45 minutes. Serve with your choice of meat.
