Ingredients For blackeyed peas with bacon

  • 1 lb
    dried blackeyed peas, rinsed and sorted
  • 1/2 lb
    bacon, cooked and crumbled
  • 1 1/2 c
    chopped onion
  • 1 clove
    chopped garlic
  • 2 TBSP
    butter
  • 1/2 tsp
    dried thyme
  • salt to taste
  • additional crumbled bacon

How To Make blackeyed peas with bacon

    Boil peas, bacon in enough water to cover in a large kettle. Boil for 2 minutes,cover, remove from heat and let stand for 1 hour. Do not drain.

    In a skillet saute onion and garlic in butter until tender. Add to pea mixture along with thyme and salt.

    Return to the heat, cover, and simmer for 40 minutes or until peas are soft. Top with addition crumbled bacon if desired
