The Big Easy is the nickname for New Orleans, where I once lived. These onions were inspired by an old Creole recipe for Spanish onions, according to the author of Delicious & Dependable Slow Cooker Recipes, where I found this delectable dish. Photo from same.

Slow Cooker Crock Pot
Ingredients For big easy braised onions

2 to 3 lgspanish onions

6 to 9whole cloves

1/2 tspsalt
-
1/2 tspcracked black peppercorns

1 pinchground thyme
-
grated zest and juice of 1 orange
-
1/2 ccondensed beef broth, undiluted

finely chopped fresh parsley, optional
-
hot pepper sauce, optional
How To Make big easy braised onions

1Stud the onions with cloves. Place in slow cooker and sprinkle with salt, peppercorns, thyme and orange zest.

2Pour orange juice and beef broth over onions, cover and cook on LOW for 8 hours, or on HIGH for 4 hours, until onions are tender.

3Keep onions warm. In a saucepan over medium heat, reduce cooking liquid by half.

4When ready to serve, cut onions into quarters. Place on a deep platter and cover with the sauce. Sprinkle with parsley, if desired, and the hot pepper sauce, if desired.
