Betty and my mom were best friends from childhood up into their seventies. Mom passed away a couple of years ago, but Betty still keeps in touch. She gave me this scrumptious recipe about a year ago. I was never really a fan of yams, but I think this recipe has converted me!

Ingredients For betty ann's favorite yam dish

4 md(or larger) yams, cooked and mashed

1/2 tspsalt

1 tspcinnamon

1 tspnutmeg
-
1/4 tspground ginger
-
grated rind (zest) of one orange
-
18 ounce can crushed pineapple, drained

2beaten eggs
-
1 Tbspbutter, melted
-
1/4 cbrown sugar, mixed with 1/2 cup sour cream
-
1/4 cslivered almonds
-
30miniature marshmallows
How To Make betty ann's favorite yam dish

1Pre-heat oven to 350º.

2Mix well all ingredients except brown sugar mixture, almonds and marshmallows. Spoon into greased baking casserole.

3Spread brown sugar and sour cream mixture over the top of casserole. Sprinkle slivered almonds over top, then scatter marshmallows over all.

4Bake at 350º for 40 to 60 minutes, or until puffy and lightly browned.
