Beets have such a wonderful taste to them , and the sauce really brings out their natural flavor. Great w/ a pork loin dinner.

Ingredients For beets w/ orange and ginger sauce

  • 6 lg
    beets, scrubbed clean
  • 1 c
    orange juice
  • 2 Tbsp
    candied ginger
  • 2 Tbsp
    maple syrup
  • 1/2 c
    chopped walnuts
  • 1 Tbsp
    white vinegar
  • 1 Tbsp
    cornstarch

How To Make beets w/ orange and ginger sauce

    Place beets in lg pot w/ enough water to cover them. Cover, bring to a boil. Reduce heat and simmer until tender, about 40 mins.

    Drain and let cool. Remove skins from beets and cut into wedges. In saucepan, combine remaining ingredients. Bring to a boil. Reduce heat and simmer until thickened, stirring often. Add beets, toss. Serve.
