Ingredients For beet fritters

  • 4
    good-sized beets
  • 4 Tbsp
    flour
  • 3 Tbsp
    cream
  • 2
    eggs
  • 1 tsp
    salt
  • 1/4 tsp
    pepper
  • extra virgin olive oil to lubricate pan

How To Make beet fritters

  • 1
    Boil beets until tender, rub off skin, and mash to a smooth pulp
  • 2
    Blend flour, cream, eggs, salt, and pepper. Mix in beets.

    Cook like pancakes on a hot greased pan. Serve.
