I like to use this as alternative to plain black-eyed peas on New Years Day. Sort of like hoppin-john but with ground beef!

Ingredients For beef and black-eyed pea casserole

1 lbground round

1 lggarlic clove, minced

2 can(15 ounce) black-eyed peas with jalapenos, drained

1 can(16 ounce) chopped tomatoes, drained

2 ccooked rice
-
1 ccheddar cheese, shredded (4 ounces)

1/2 cminced onion
-
1 Tbspbutter, melted

1/2 tspsalt

1/2 tspblack pepper
How To Make beef and black-eyed pea casserole

1Brown the ground round and garlic in a large skillet over medium heat, stirring until the meat crumbles. Drain and place in a large bowl.

2Add the black-eyed peas and remaining ingredients; stir well.

3Place the mixture in a lightly greased 13 x 9 x 2 inch baking dish. Bake, uncovered, at 350 degrees for 20 minutes.
