Blue Ribbon Recipe

Instead of the more traditional mozzarella cheese, this fresh and light tomato salad makes use of tangy Feta cheese... and it's terrific. An easy side dish for meat, chicken, or fish. The Feta cheese complements the basil and both ingredients bring out the flavor of the tomatoes. It's colorful, cool, and refreshing.

Ingredients For basil tomatoes

  • 2 Tbsp
    olive oil
  • 1 tsp
    vinegar
  • 1 tsp
    chopped fresh basil
  • salt and pepper
  • 1/4 tsp
    garlic powder
  • 3 md
    tomatoes, sliced
  • Feta cheese, crumbled

How To Make basil tomatoes

  • Oil, vinegar, basil, and seasonings in a bowl.

    Combine oil, vinegar, basil, salt, pepper, and garlic powder.
  • Tossing tomatoes in the marinade.

    Add tomatoes and evenly coat.
  • Tomatoes chilling in the fridge.

    Chill at least 2 hours.
  • Feta cheese sprinkled over the tomatoes.

    Before serving, sprinkle with Feta cheese.
