Ingredients For baked yellow rice & vegetables

  • 2 c
    long grain rice, uncooked
  • 1 sm
    bell pepper; diced
  • 1 sm
    onion; diced
  • 1 tsp
    garlic powder
  • 1/2 tsp
    ground turmeric
  • 1 Tbsp
    light olive oil
  • 3 Tbsp
    butter, unsalted
  • 1 can
    chicken or beef broth(14.5 oz.)
  • 1 can
    water(fill broth can) plus 1/3 c.
  • 1 c
    carrots, julienned
  • 1 c
    broccoli, frozen
  • salt and pepper to taste

How To Make baked yellow rice & vegetables

    Preheat oven to 350*

    Add butter and oil to cold skillet then heat on medium heat. Add onion and bell pepper. Saute one minute. Add rice and turmeric; stir. Pour in broth and water, adding seasonings and other vegetables.

    Bring to boil stirring once more. Pour ingredients into 13x9 casserole dish. Bake for 30 minutes or until liquid is absorbed.
