Ingredients For baked yellow rice & vegetables

2 clong grain rice, uncooked

1 smbell pepper; diced

1 smonion; diced

1 tspgarlic powder
-
1/2 tspground turmeric
-
1 Tbsplight olive oil

3 Tbspbutter, unsalted

1 canchicken or beef broth(14.5 oz.)

1 canwater(fill broth can) plus 1/3 c.

1 ccarrots, julienned
-
1 cbroccoli, frozen

salt and pepper to taste
How To Make baked yellow rice & vegetables

1Preheat oven to 350*

2Add butter and oil to cold skillet then heat on medium heat. Add onion and bell pepper. Saute one minute. Add rice and turmeric; stir. Pour in broth and water, adding seasonings and other vegetables.

3Bring to boil stirring once more. Pour ingredients into 13x9 casserole dish. Bake for 30 minutes or until liquid is absorbed.
