baked onion rings

These onion rings are baked (not deep fried), so they have a fresh taste and a crispy texture. Sweet varieties of onions work best, but you can use white onions or yellow onions if it's what you have on hand, but be sure to soak them the full 60 minutes in water before coating in the flour and batter steps. (It tempers the enzymes that cause onion tears, and it helps to impart the full onion taste without a bitter aftertaste.)

Ingredients For baked onion rings

  • ONION RINGS
  • 2 lg
    vidalia onions, peeled (or other sweet variety of onion, such as maui or walla walla)
  • 3/4 cup
    all-purpose flour
  • 1 tsp
    salt
  • 1 tsp
    black pepper
  • 4 lg
    egg whites
  • 2 Tbsp
    mayonnaise
  • 1/4 tsp
    garlic powder
  • 1/4 tsp
    onion powder
  • 1 cup
    italian-seasoned breadcrumbs
  • cooking spray
  • DIPPING SAUCE (OPTIONAL)
  • 1/2 cup
    mayonnaise (low-fat is ok)
  • 1/4 cup
    ketchup
  • 1 Tbsp
    horseradish cream (or creamy horseradish sauce)
  • 1/2 tsp
    paprika
  • 1/4 tsp
    worcestershire sauce

How To Make baked onion rings

    Cut both onions into 1/2-inch wide slices, and separate rings. Place onion rings in a bowl of water for at least 30 minutes and no more than 60 minutes. Drain water and pat onion rings dry with paper towels.

    Preheat oven to 425°F. Line a large baking sheet (or jelly roll pan) with parchment paper. Very lightly dust parchment with a light spritz of nonstick cooking spray.

    In one bowl, whisk together the flour, salt and pepper.

    In a second bowl, whisk together the egg whites, mayonnaise, garlic powder and onion powder.

    Add breadcrumbs to a third bowl.

    Place onion rings, a few at a time, to the flour mixture until well coated. Then lift onion rings from flour mixture, dip into the egg white mixture until thoroughly coated, then press them into the breadcrumbs until well coated in crumbs. Place coated onion rings on the parchment paper. Repeat with remaining onion rings.

    Spray tops of onion rings with nonstick cooking spray. Place baking sheet in oven and let bake 10 minutes. Turn each onion ring, spray with nonstick cooking spray, and bake an additional 5 minutes or until they're all crispy and evenly browned.

    For the dipping sauce - whisk together the mayonnaise, ketchup, horseradish, paprika and Worcestershire sauce. Keep chilled until ready to serve. Then serve the sauce with baked onion rings, for dipping.
