This is a healthier version of Fried Green Tomatoes. I think you will find it is also good without the butter and frying them in it. These make a good side dish at a BBQ. This recipe was in a church cookbook dated 2007.

Ingredients For baked green tomatoes

  • 1 c
    seasoned bread crumbs
  • 1/4 c
    olive oil, extra virgin
  • 3 Tbsp
    water
  • 3 clove
    garlic, minced
  • 4 Tbsp
    freshly grated parmesan cheese
  • 3 lg
    green tomatoes, sliced into 1/4 inch slices
  • sea salt and freshly ground black pepper as desired (depending on amount of seasoning in bread crumbs)

How To Make baked green tomatoes

  • 1
    Preheat oven to 350 degrees. Spray cookie sheet with non-stick spray. Combine bread crumbs, olive oil, water, garlic, and cheese in a small bowl. Place tomatoes on cookie sheet in a single layer. Top each slice of tomato with an equal portion of bread crumbs mixture. Sprinkle with a little sea salt and freshly ground black pepper if needed. Bake for 35-40 minutes or until topping is light brown.
