When I was first married, my mother-in-law served these. They became my favorite way to eat cauliflower. They are like potato chips...you never can eat just one!

Ingredients For baked cauliflower

1head of cauliflower, separated into florets

2eggs, beaten

1 cbread crumbs, dry

2 Tbspolive oil
How To Make baked cauliflower

1Wash cauliflower, place in a saucepan, with about 2 inches of salted water, cover pot, bring to a boil, and cook for 10 minutes. Drain cauliflower, and let cool for a minute or two. Don't overcook cauliflower, or it will fall apart.

2Beat eggs in a shallow bowl, and dip cauliflower pieces in egg, and then breadcrumb.

3Place breaded pieces in a casserole dish sprayed with cooking spray, drizzle with the olive oil, and bake in a 350 degree oven for 30 minutes, turning pieces so they brown on all sides. Enjoy!
