This is a nice side for almost any meal. No heavy sauce or anything like that. Really quick and easy if you use grated carrots from the produce aisle! These are not soft or mushy at all. They retain a really nice texture.

Ingredients For baked carrots

  • 4 c
    grated carrots
  • 2 tsp
    sugar
  • 1 tsp
    salt
  • 1/4 tsp
    pepper
  • 2 tsp
    balsamic vinegar
  • 1/4 tsp
    onion powder
  • 1/4 c
    butter or margarine
  • 1/2 tsp
    dill or cumin (optional)

How To Make baked carrots

  • 1
    Toss carrots and other ingredients except butter in a greased casserole dish. Smooth out.

    Slice butter or margarine over the top.

    Cover and bake at 350 for an hour. Maybe check at 45-50 minutes or so. Sometimes they go faster.

    The dill or cumin is very good. Just depends on what meat you are serving.
