One of my aunts favorite side dish for Thanksgiving. It's so good, it could pass for a dessert!

Ingredients For baked butternut squash w/ maple syrup

  • 3-1/2 lb
    butternut squash
  • 1/4 c
    butter
  • 1/2 c
    diced onion
  • 1/4 tsp
    ground nutmeg
  • 1/2 c
    chicken broth
  • 1/3 c
    real maple syrup

How To Make baked butternut squash w/ maple syrup

    Heat oven to 400. Halve the squash and place on a lg baking sheet, cut-side up. Bake 50 min or until tender. Scoop out squash meat and transfer to lg bowl. In saucepan, melt butter over med-low heat. Add onion and nutmeg. Saute until onion is tender. Transfer onion to bowl w/ squash. Add chicken broth and syrup. Puree mix in processor until smooth. Season w/ salt and pepper. Return puree to saucepan. Stir over medium heat until heated through. Transfer to serving bowl, serve hot.
