Can you say SCRUMPTIOUS? This recipe comes from SkinnyTownUSA (look for them on Facebook). These patties were so easy to make, are healthy because they are baked not fried, and clean-up is a snap. I've made them several times and have even added cauliflower and shredded zucchini. They are just as yummy cold as they are hot, on top of that, they make a quick and easy snack.

Ingredients For baked broccoli patties

2 tspolive oil
-
2garlic cloves, minced

1/2onion, diced fine

16 ozfrozen broccoli, thawed, rough chop

1 cpanko crumbs
-
1/2 ccheddar cheese, shredded

1/3 cparmesean cheese, grated

2eggs, beaten slightly
-
salt and pepper
How To Make baked broccoli patties

1Preheat the oven to 400 degrees F. Line a baking sheet with foil and spray lightly with non-stick spray.

2Heat oil and saute the onions and garlic until softened. Season with salt and pepper. Set aside to cool.

3Place the thawed broccoli in a kitchen tea towel and twist each end tightly to remove any excess water. In a bowl, beat the eggs and mix in the cheeses. Give the broccoli a rough chop.

4Add the broccoli, garlic, onions and Panko crumbs to the egg/cheese mixture and mix well.

5Form patties and place on baking sheet. (The mixture has a wet consistency at this point--you don't think they will hold together, but they do.)

6Bake for 15 minutes. Flip the patties over and cook for another 15 minutes.

7ENJOY! I can see dipping these in a garlic aioli, mayo/dill or ranch dressing if one was so inclined. Great grab-n-go snacks. Note: I've also added cauliflower and/or shredded zucchini...works just as well.
