Ingredients For aunt stella's zucchini

  • 1 stick
    butter
  • 1 md
    chopped onion
  • 1 md
    green pepper
  • 4 c
    diced zucchini
  • 4 c
    diced yellow summer squash
  • 1 tsp
    garlic powder
  • 4 - 5 lg
    eggs
  • 2 c
    shredded cheddar cheese
  • 4 - 5 slice
    bread

How To Make aunt stella's zucchini

  • 1
    Melt butter - add onion, green pepper and garlic powder. Saute - then add diced squash. Stir - put on lid - cook until soft. About 20 min. Remove from heat. In a large bowl, beat eggs, add the bread which was torn into small pieces. Add the cheese. Mix well and blend into the squash mixture. Put into a greased baking dish. Bake at 350° for 25 minutes. Use small tender squash. Serve warm.
