This takes a bit of preparation time, but is well worth it. It's almost a meal in itself - all that cheese! It's another of the old Alston Family recipes I'm including in our family cookbook.

Ingredients For aunt marjorie's fiesta squash casserole
- FIRST LAYER

3 smzucchini or yellow squash, diced

4eggs, beaten
-
1/4 cbutter, melted
-
1 cparmesan cheese, grated

salt and pepper to taste

1 Tbspsugar
-
1/2 cminced onion
- SECOND LAYER
-
3 to 4 mdsized tomatoes, sliced

salt and pepper to taste
- THIRD LAYER
-
2 lgonions, sliced thinly

1 csour cream
-
2 csharp cheddar, grated

1/2 cmayonnaise
How To Make aunt marjorie's fiesta squash casserole

1Preheat oven to 350°. Mix FIRST LAYER ingredients together well and spread on the bottom of a 3-quart greased casserole dish.

2Place tomatoes in overlapping pattern on top, as the SECOND LAYER. Sprinkle with salt and pepper.

3Place sliced onions over top of tomatoes. Mix the remaining ingredients of THIRD LAYER well, and spread over top of casserole. May sprinkle a little paprika on top for color if desired.

4Bake at 350° for 45 - 60 minutes, until casserole bubbles around the edges for about 15-20 minutes. Cool slightly before slicing into squares for serving.
