Ingredients For asparagus with lemon parmesan butter

  • 1 lb
    jumbo asparagus bottoms trimmed
  • 1 Tbsp
    lemon juice
  • 3/4 c
    cold butter cut into cubes
  • 1/4 c
    freshly grated parmigiano reggiano cheese
  • 1/2 Tbsp
    lemon zest

How To Make asparagus with lemon parmesan butter

  • 1
    Place water in a 12 inch saute pan and add salt. Bring to a boil. Lay the asparagus in the pan in a single layer. Cook 7 minutes.

    Meanwhile make the butter. Add the lemon juice to a saucepan. Bring to a simmer. Whisk in the butter one piece at a time. Do not let it get to hot or the butter will break.

    Slowly whisk in the cheese and lemon zest. Season with salt and pepper. With tongs remove the asparagus to a plate and top with the sauce.
