Ingredients For asparagus tomato stir-fry

  • 1 Tbsp
    cold water
  • 2 tsp
    soy sauce
  • 1 tsp
    corn starch
  • 1/4 tsp
    salt
  • 1 lb
    fresh asparagus spears
  • 1 Tbsp
    vegetable oil
  • 4
    green onions, sliced diaganally into 1-inch pieces
  • 1 1/2 c
    sliced fresh mushrooms
  • 2 sm
    tomatoes, cut into thin wedges

How To Make asparagus tomato stir-fry

    Combine the first 4 ingredients in a small bowl; stirring until blended. Set aside.

    Snap off the tough ends of the asparagus. Remove scales from the stalks of the asparagus if desired. Cut the asparagus diagonally into 1 1/2 inch pieces. Set aside.

    Pour oil around the top of a large preheated wok or high sided skillet. Heat the oil at medium-high heat (325º) for 2 minutes. Add the asparagus and green onions; stir fry for 3 to 4 minutes. Add mushrooms, stir fry 1 minute. Add the reserved corn starch mixture to the wok or skillet; cook until thickened and bubbly. Add the tomato, and cook just until heated. Serve immediately.
