This is the only way I will eat asparagus, and I said, "this is like candy!!" A really quick and yummy way to make asparagus.

Ingredients For asparagus candy

  • 2 bunch
    asparagus
  • 4 Tbsp
    olive oil
  • 1/2 c
    parmigiano-reggiano, grated
  • 4 Tbsp
    lemon juice, fresh
  • salt and pepper to taste

How To Make asparagus candy

    Pre heat oven to 450 degrees.

    Wash asparagus and snap hard, woody ends off. Pour olive oil, salt and pepper over asparagus. Make sure they all get a good rub down!

    Put the asparagus on a large cookie sheet. Make sure they are spread out flat (you may have to do 2 batches). Roast for 10 minutes.

    After 10 minutes, take the asparagus out and sprinkle with the cheese and lemon juice. Put back in the oven for 5 to 8 minutes. I take them out when the cheese is nice and crispy!
