A special salad with the colors of Spring flowers just makes me happy sometimes ....and a little Asian flavor makes me happy anytime :0)

Ingredients For asian raisin spring veggie salad

  • 1/4 c
    sesame oil
  • 3 Tbsp
    light soy sauce
  • 3 Tbsp
    honey
  • 1 Tbsp
    minced garlic
  • 3 Tbsp
    rice vinegar
  • 1/4 tsp
    ginger
  • 3 c
    finely julenned or shredded carrots
  • 1 c
    finely julienned green pepper
  • 1 c
    well-drained julienned beets
  • 1/2 c
    golden raisins
  • 3 Tbsp
    sesame seeds
  • 1/2 c
    thinly shredded green onions

How To Make asian raisin spring veggie salad

    In a medium bowl, mix sesame oil, soy sauce, honey, garlic, vinegar and ginger. Set aside.

    Place the carrots,pepper and raisins in a microwave-safe bowl. Cover loosely and microwave on high for aout 3-4 minutes or until veggies are crisp-tender.

    Add the drained beets and 1/4 C of the green onions to the veggies, then drizzle with half of the dressing. Sprinkle with 2 T sesame seeds and toss well, adding a little more dressing to cover well.

    Cover the bowl and refrigerate for 3 minutes. Before serving, sprinkle with remaining sesame seeds and green onions
