I got this recipe from a friend and it is a good one. The crispy vegetables are accented by the simple (but delicious)sauce. This salad needs to be refrigerated over-night.

Ingredients For amelia's sweet and sour vegetables

3 cchopped cauliflower (use head only, not stems)

3 cchopped broccoli florets

2 mdcarrots, chopped thin

1 mdzucchini, quartered and sliced thin

1 mdsweet onion, halved and sliced thin

3/4 capple cider vinegar

1/4 csugar

1/2 tspsalt (optional)

2 Tbspolive oil

3-4 Tbspsunflower seed kernals, optional

1In a large bowl stir together vegetables. Set aside In a saucepan, over medium heat combine vinegar, sugar, and salt. Bring to a boil. Remove from heat and stir in oil. Pour over vegetables and toss to coat evenly.

2Cover bowl and refrigerate overnight. When ready to serve sprinkle with sunflower seeds and serve immediately.
