This is an easy side dish to assemble, and can be baked in a convection oven, as well as, your air fryer. To keep this recipe simple, and true to its natural flavors, we will only be using salt and pepper for the spices. So, you ready… Let’s get into the kitchen.

Ingredients For air fryer essentials: buttery carrots & taters

1 lbyukon gold, or red potatoes

1 lbcarrots

2 Tbspolive oil, extra virgin, divided

2 Tbspsweet butter, unsalted, at room temp

salt, kosher variety, to taste

black pepper, freshly ground, to taste
How To Make air fryer essentials: buttery carrots & taters

1PREP/PREPARE

2Gather your Ingredients (mise en place).

3Chef's Note: I tried several different varieties of potatoes for this recipe, and I found that a good waxy variety; such as: Yukon gold, or red potatoes hold up best in the cooking process.

4Cut the potatoes into quarters, and then slice up the carrots.

5Chef’s Tip: Cut the carrots to the same thickness as the quartered potatoes. That way they will finish cooking at the same time.

6Add the veggies to a pot of cool water.

7Bring the pot up to the boil as quickly as possible, and allow to boil for 4 – 5 minutes.

8Discard the water, but keep the veggies in the warm pot until the internal heat from the veggies causes most of the moisture to evaporate.

9Add the veggies to a small bowl, with one tablespoon of oil, and one tablespoon of softened butter. Then toss to coat.

10Chef’s Note: The heat from the veggies will melt the softened butter.

11Chef’s Note: While tossing the veggies into the oil and butter, add a bit of salt and pepper, to taste.

12Add them to the air fryer.

13Set the temp to 375f (190c), and cook for 7 minutes.

14Chef’s Note: About every two minutes, shake the basket.

15Remove the veggies from the air fryer, and return them to bowl you used to toss them with the olive oil and butter. Add the second tablespoon of oil, and butter, and toss.

16Return veggies to the air fryer, and continue to cook until the veggies are crispy, and tender, an additional 7 – 10 minutes.

17Chef’s Note: If you really want to be decadent, toss the veggies in an additional tablespoon of butter, before serving.

19Serve with fish, chicken, pork… whatever. Enjoy.
