My Mom makes amazing fried squash but as I get older I try to find reduced fat alternatives to some of my old favorites. These fit the bill and are absolutely delicious.

Ingredients For air fried squash

  • 2
    medium to large yellow squash
  • 1 c
    corn meal
  • 1 c
    italian style or plain bread crumbs
  • 1 tsp
    salt
  • 1/8 tsp
    ground black pepper
  • 1/2 tsp
    garlic powder
  • 1/2 tsp
    onion powder
  • 4
    eggs
  • 2 Tbsp
    milk
  • canola oil for drizzling/brushing

How To Make air fried squash

  • 1
    Mix together cornmeal, bread crumbs, salt and seasonings in a bowl.

    In a separate bowl, beat together eggs and milk.

    Wash yellow squash. (Do not peel) Slice into thin circles.
  • 4
    Preheat air fryer to 400 degrees.

    Pour a bit of canola oil into a bowl. Use some of the oil to brush the bottom part of basket using a barbecue brush.

    Dip each squash circle in egg and roll in breadcrumb mixture. (You will have to work in batches)

    Lay breaded squash in air fryer basket. Do not crowd, overlap or or stack.

    Use the brush to gently dab a bit of oil over the tops of the squash. It doesn't take much.

    Air fry at 400 degrees for 6 minutes.

    Flip squash and air fry for another 6 minutes.

    Place cooked squash on a wire rack over a pan and place in warm oven while you finish batches.

    These serve up hot and crispy!
