air fried squash
My Mom makes amazing fried squash but as I get older I try to find reduced fat alternatives to some of my old favorites. These fit the bill and are absolutely delicious.

Ingredients For air fried squash

2medium to large yellow squash
-
1 ccorn meal
-
1 citalian style or plain bread crumbs
-
1 tspsalt
-
1/8 tspground black pepper
-
1/2 tspgarlic powder
-
1/2 tsponion powder
-
4eggs
-
2 Tbspmilk
-
canola oil for drizzling/brushing
How To Make air fried squash
-
1Mix together cornmeal, bread crumbs, salt and seasonings in a bowl.

2In a separate bowl, beat together eggs and milk.

3Wash yellow squash. (Do not peel) Slice into thin circles.

4Preheat air fryer to 400 degrees.

5Pour a bit of canola oil into a bowl. Use some of the oil to brush the bottom part of basket using a barbecue brush.

6Dip each squash circle in egg and roll in breadcrumb mixture. (You will have to work in batches)

7Lay breaded squash in air fryer basket. Do not crowd, overlap or or stack.

8Use the brush to gently dab a bit of oil over the tops of the squash. It doesn't take much.

9Air fry at 400 degrees for 6 minutes.

10Flip squash and air fry for another 6 minutes.

11Place cooked squash on a wire rack over a pan and place in warm oven while you finish batches.

12These serve up hot and crispy!
