Ingredients For vegetable rice

1/2 cfat free egg substitute

1/2 tspseasame oil
-
1 tspolive oil
-
1 cchopped onions
-
3 clovegarlic, minced
-
3/4 ceach, diced carrots and diced celery

1/2 cchopped green onions
-
1 tspgrated ginger roots
-
1/4 creduced sodium soy sauce

1 Tbsphoney

4 ccooked brown rice
How To Make vegetable rice

1Whisk together egg substitute and sesame oil in a small bowl. Set aside.

2Add olive oil to a large non stick skillet and place over medium heat. Pour egg mixture over bottom of skillet. Cook until set, about 3 minutes. Remove from skillet and cut into bite-sized pieces. Set aside.

3Spray same skillet with non stick spray. Add onions, garlic, carrots, green onins, and ginger root. Cook and stir over medium heat for about 5 minutes, until vegetables are softened. Add soy sauce, honey, cooked egg, and cooked rice. Mix well. Cook for 2-3 minutes, until heated through.
