Ingredients For vegetable medley

  • 3 lg
    green tomatoes
  • 1 bunch
    green onions
  • 4 md
    yellow squash
  • 2 lb
    okra, fresh
  • shortening for frying
  • flour for coating

How To Make vegetable medley

  • 1
    slice tomatoes and then quarter them, cut up green onions, slice squash, and cut okra
  • 2
    coat vegetables in a large bowl with flour, salt and pepper to taste
  • 3
    melt shortening in skillet
  • 4
    add vegetable mixture, and fry....stirring to get an even browning
