Ingredients For two corn casserole

  • 1/2 c
    margarine or butter
  • 3/4 c
    green pepper, chopped
  • 1/3 c
    onion, chopped
  • 1 can
    7oz cream style corn
  • 1 can
    7oz whole kernel corn, not drained
  • 3
    eggs, well beaten
  • 1 pkg
    8.5 oz corn muffin mix
  • 1 c
    cheddar cheese, shredded (4oz)

How To Make two corn casserole

    Preheat oven to 350.
  • 2
    In small skillet, melt margarine. Add green pepper and onion. Saute until crisp and tender
  • 3
    In large bowl, combine the two corns, eggs, and muffin mix. Blend well.

    Add onion/pepper mixture .. and mix well. Pour into 2 quart casserole dish. Sprinkle with cheddar cheese.

    Bake until firm or set (about 55-65 minutes) Let stand 5 minutes before serving.
