Ingredients For two corn casserole

1/2 cmargarine or butter

3/4 cgreen pepper, chopped

1/3 conion, chopped

1 can7oz cream style corn

1 can7oz whole kernel corn, not drained

3eggs, well beaten

1 pkg8.5 oz corn muffin mix

1 ccheddar cheese, shredded (4oz)
How To Make two corn casserole

1Preheat oven to 350.

2In small skillet, melt margarine. Add green pepper and onion. Saute until crisp and tender

3In large bowl, combine the two corns, eggs, and muffin mix. Blend well.

4Add onion/pepper mixture .. and mix well. Pour into 2 quart casserole dish. Sprinkle with cheddar cheese.

5Bake until firm or set (about 55-65 minutes) Let stand 5 minutes before serving.
