I got this easy to make stuffed pepper recipe from my brother. I thought it tasted so good, and it's so easy to make!

Ingredients For stuffed pepper casserole

  • 2 c
    herb-seasoned stuffing mix
  • 1/2 c
    herb-seasoned stuffing mix
  • 1 Tbsp
    melted butter
  • 1 lb
    lean ground beef or ground turkey
  • 1
    onion, chopped
  • 1
    14.5 oz can whole peeled tomatoes, cut up
  • 1
    8 oz can corn, drained
  • 2 lg
    green bell peppers, cut lengthwise into quarters

How To Make stuffed pepper casserole

    Heat oven to 400. In bowl, stir together 1/4 cup stuffing mix and butter. In lg skillet, over medium-high heat, Cook beef and onion until beef is browned.

    If using ground beef, drain any fat from skillet. Stir in tomatoes and corn. Stir in remaining stuffing mix. Arrange peppers, cut-side up in shallow casserole dish.

    Spoon beef mix into peppers. Sprinkle the top w/ reserved stuffing mix. Cover, bake 25 mins. Uncover, bake 5 mis.
