I saw this tasty recipe in a little booklet put out by my pharmacy. I love brussels sprouts and I love pine nuts, so this has got to be a winner! I can't wait to make it! Recipe & photo: Diabetes Focus magazine

Ingredients For shaved brussels sprout salad w/pine nuts & lemon

  • 20 md
    brussels sprouts, cleaned
  • 4 Tbsp
    olive oil, extra virgin
  • 2 Tbsp
    fresh lemon juice
  • 1/4 c
    pine nuts
  • 1/4 c
    grated pecorino cheese
  • salt and freshly ground pepper

How To Make shaved brussels sprout salad w/pine nuts & lemon

    Cut the Brussels sprouts in half lengthwise and thinly slice them until you get to the chunky white core. Discard the remainder.

    Place Brussels sprouts in a medium mixing bowl and add the olive oil, lemon juice, pine nuts and cheese. Mix well. Season with salt and pepper.

    Cover the bowl and let sit for 30 minutes to allow the flavors to blend before serving.
